Organic and biodynamic"Zagra" by Valle dell'Acate is a Sicilian white wine made from Grillo grapes with a sunny, fresh, and Mediterranean character. On the palate, it is rich, dynamic, and easy-drinking, characterized by a pleasant savory sensation.
The Grillo “Zagra” from Valle dell'Acate is one of the most recent labels from this interesting reality in the Ragusa area. The Grillo grape variety was created at the end of the 19th century by crossing Catarratto and Moscato d’Alessandria. Originating from western Sicily, in recent years it has experienced a true rediscovery, highlighting its potential. Today it is cultivated throughout the island with excellent results and continuously improving quality levels. In the sandy and clayey soils of Contrada Bidini, Grillo expresses itself with a wine that has a typically mediterranean, sunny, and marine profile, characterized by delicate aromas, fresh fragrances, and a pleasant salty vein.
“Zagra” is a very interesting Grillo, produced in southeastern Sicily by the Valle dell'Acate winery. Gaetana Jacono, who has been at the helm of the family business for several years, has always wanted to broaden the traditional horizons of the company’s range. In a land of great reds, she selected a plot particularly suited for producing a white. The Grillo vines are planted near the coast, in soils characterized by a predominantly sandy matrix, with the presence of clays. They are light, loose, and draining soils, particularly suitable for white grape varieties. The proximity to the sea helps create a dry and always ventilated Mediterranean microclimate due to the presence of mild sea breezes. The grapes are harvested in the second half of August and undergo a soft pressing. The free-run must ferments in stainless steel tanks at controlled temperature. The wine matures, still in steel, for 4 months and finishes its aging period with another 4 months in bottle. The sip is smooth and clear with ripe and rich fruit, opening up to tropical hints, crossed by a salty trail that leads to a fresh and persistent finish.
