Organic and biodynamicThe "Guet-Apens" Du Vin aux Liens is a white produced by Domaine Albert Hertz, for a collective project managed by Vanessa Letort who created this sparkling, young, and cheeky project. This white is produced with 5 different varieties, which ferment together to create a unique blend. A bouquet of fruit, citrus, and wildflowers meets hints of aromatic herbs and typical mineral notes of Alsatian whites. Fresh, fragrant, and with an almost cutting sip!
Du Vin aux Liens 'Guet-Apens' is a French white wine with a mineral and gently aromatic olfactory profile that originates from the collaboration between Vanessa Letort and Domaine Albert Hertz. The Hertz family settled in Eguisheim, an Alsatian village located just south of Colmar, in 1950 and is now run by Alber Hertz with the help of his son Frédéric. The two follow a sustainable and minimalist philosophy based on the belief that wine is born in the vineyard, not in the cellar, in order to allow the terroir to express itself freely. Since 1982, no synthetic chemical products have been used in the vineyards, in 2008 the Domaine obtained organic certification while in 2011 it received biodynamic certification.
The 'Guet-Apens' of Du Vin aux Liens comes from a blend of local grape varieties Sylvaner (40%), Muscat Ottonel (30%), Riesling (10%), Pinot Gris (10%) and Gewürztraminer (10%). All these varieties, represented by vines with an average age of 30 years, are cultivated following the principles of certified organic and biodynamic agriculture on soils characterized by clay and limestone marls, with a southeast exposure.clay and limestone, with a southeast exposure. After the harvest, the grapes undergo a gentle direct pressing, followed by spontaneous alcoholic co-fermentation carried out by only indigenous yeasts. The subsequent maturation phase takes place in oak barrels and lasts for about 12 months until bottling, which occurs without prior filtration.
The Alsatian white wine 'Guet-Apens' from the winemaking project Du Vin aux Liens has a pale straw yellow color. The aromatic bouquet expresses scents of green apple, lemon peel, jasmine, and sage, enriched by mineral notes of flint. The sip is clean and very fresh, characterized by a persistent fragrant and mineral progression.
