Artisanal winery Clos Troteligotte introduces Cahors 'K-Nom,' a red wine capable of showing the more accessible and immediate profile of this appellation in the Sud Ouest wine region. Emmanuel Rybinski, owner of Clos Troteligotte, manages 19 hectares of vines in a wooded setting following the dictates of biodynamic agriculture, certified since 2017. Emmanuel strongly believes that the quality of a wine depends above all on the work in the vineyard, always seeking the perfect balance between vine and soil.

Emmanuel Rybinski Clos Troteligotte 'K-Nom' Cahors comes from a blend of Malbec (85 percent) and Merlot (15 percent), raised according to organic and biodynamic farming principles, both certified. The grapes used to produce this label come from a micro-parcel selection of vines about 30 years old, planted on soils consisting mainly of clay and limestone. Manual harvesting is followed by spontaneous alcoholic and malolactic fermentation, with brief maceration on the skins associated with gentle extraction techniques. The ensuing period of elevation lasts a few months and takes place entirely in cement tanks. No sulfur is added during the winemaking process.

Clos Troteligotte's 'K-Nom' Cahors possesses a deep ruby red hue. Rich and fragrant aromas of berries, flowers and underbrush strike the nose, while on the palate the juicy freshness stands out, capable of making the sip smooth and drinkable, with unobtrusive tannins. This is a bottle with a balanced and dynamic taste, ideal to be paired with assorted cold cuts, tasty first courses and white meats.
