Zymé's Kairos is an absolutely unique wine, a true mosaic of sensations and emotions. A wine that tells the story of a winery, Zymé, that fascinated us in a single moment.

It is made from at least 15 different grapes, including four white grapes (Garganega, Trebbiano Toscano, Sauvignon Blanc and Chardonnay) and 11 red grapes (Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syraz, Teroldego, Croatina, Oseleta, Sangiovese and Marzemino). Grapes that each bring their own, distinctive, unique characteristic. "Kairos" in ancient Greek means "convenient, opportune, for the right time," and this wine from Zymé embodies that very definition. A unique philosophy represented by the bottle label that depicts a mosaic of pieces of many colors, to testify to the origin of the 15 different grapes, and a sundial that expresses the concept of exact time, as per the Greek definition. Elements that make it a fascinating wine, a perfect representation of the terroir of origin.

Talking about vineyards here is difficult since each grape comes from distinctive plot of land; all are located in the province of Verona and all are cultivated with organic fertilization and manual pruning, with bud selection and strictly manual harvesting. Harvesting that follows the different ripening times of the multiple grape varieties used. Vinified in steel and cement tanks, it then goes through fermentation with indigenous yeasts for 20-25 days. After this period, it is transferred to French oak barrels and stays here for at least 36 months, before spending another year in the bottle to stabilize. Thus is born one of the iconic wines of this fantastic reality, a unique wine capable of giving fascinating and enveloping sensations. Zymé's Kairos is rich and complex, intense and persuasive, full-bodied and persistent and offers beautiful nuances of red fruit and underbrush, tobacco, cinnamon, nutmeg and cloves...
