The Kairos is a red wine robust and very intense, aged for 36 months in barrique and obtained from a blend of 15 grape varieties, of which 11 are red. It presents notes of fruit and underbrush, tobacco and cinnamon, and on the palate it releases richness, roundness, and great personality 

The 'Kairos' by Zymè is a truly unique wine, a real mosaic of sensations and emotions. A wine that tells the story of a winery, Zymé, which captivated us in an instant.

‘Kairos’ is made from at least 15 different grapes, of which 4 are white (Garganega, Trebbiano Toscano, Sauvignon Blanc, and Chardonnay) and 11 are red (Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Teroldego, Croatina, Oseleta, Sangiovese, and Marzemino). Each grape contributes its own distinctive, unique characteristic. “Kairos” in ancient Greek means “convenient, opportune, for the right moment” and this wine from Zymé embodies this definition. A unique philosophy represented by the label of the bottle which depicts a mosaic of pieces in many colors, to testify to the origin of the 15 different grapes, and a sundial that expresses the concept of exact time, as per the Greek definition. Elements that make it a fascinating wine, a perfect representation of its terroir.

Talking about vineyards when mentioning the Zymé 'Kairos' is difficult since each grape comes from distinctive plots of land; all are located in the province of Verona and all are cultivated with organic fertilizers and manual pruning, with selection of the buds and strictly manual harvesting. Harvesting follows the different ripening times of the multiple grape varieties used. Vinified in steel and concrete tanks, it then ferments with indigenous yeasts for 20-25 days. After this period, it is transferred to French oak barriques where it rests for at least 36 months, before spending another year in the bottle to stabilize. Thus, one of the symbolic wines of this fantastic reality is born, a unique wine capable of offering fascinating and enveloping sensations. The Kairos by Zymé is rich and complex, intense and seductive, full-bodied and persistent, and presents beautiful nuances of red fruit and underbrush, tobacco, cinnamon, nutmeg, and cloves.
