"Exception" Cadillac Côte de Bordeaux Domaine de Saint Amand is an intense and structured red that brings out the expressive softness typical of Merlot. Although this grape variety is grown mainly on the right bank of the Gironde estuary, it has found excellent soil and climate conditions south of the city of Bordeaux, an area that is capable of giving great wines. The careful selection of only the best grapes and a careful and long aging in wood, allow the full expressive maturity of the variety to be appreciated, enriched by an elegant and refined set of tertiary notes that broaden its expressive range.
The Côte de Bordeaux Cadillac "Exception" represents the experience of a small estate, which works with seriousness and passion, producing excellent wines with a typically artisanal character. Domaine de Saint Amand is managed by young winemaker Sarah Simon, who oversees every aspect of the estate paying special attention to the environment. The approximately 3 hectares of the estate vineyard are HVE 3 (Haute Valeur Environnementale) certified and have been cultivated organically since 2021. The grapes come from a selection of the best Merlot plots that are more than 30 years old and are cultivated in the communal territory of Cambes on clay-limestone soils rich in gravel of alluvial origin. Fermentation takes place in temperature-controlled stainless steel tanks with maceration on the skins. The wine rests for 15 months in new French oak barrels and completes aging in the bottle.
Rouge Cadillac Côte de Bordeaux "Exception" Domaine de Saint Amand is the perfect expression of what is expected from a great pure Merlot. To the eye it is dark ruby red with purple hues. The olfactory profile is particularly complex and intense, with delicate spicy hints, aromas of blueberry, blackberry, black currant, shadowy hints of underbrush, bitter cocoa, leather, toasted hints, memories of noble woods and balsamic nuances. Structured and rich, it possesses a silky tannic texture, ripe and well integrated with the body of the wine. The palate highlights dense and multifaceted aromas, leading towards a long and very persistent finish. Already great to drink immediately, it has a good aging potential.
