The cool climate and the clay-limestone soils of medium texture have proven to be very suitable for red-skinned varieties. Fermentation takes place in temperature-controlled stainless steel tanks with a skin maceration period of about ten days. The wine matures for 5 months partly in steel tanks and partly in wood, that is, in large oak barrels and, for 15%, in barriques. After bottling, it rests in the cellar for a few months before being put on sale.
