Organic and biodynamic“Falconero Zero” is a dry Lambrusco produced according to the ancestral method, with second fermentation in bottle and degorgement à la volée. The bouquet is mineral, fruity and spicy. The taste is very dry, fresh and easy drinking, with fine tannins.
The Lambrusco “Falconero Zero” by Terraquilia combines the gastronomic generosity typical of the grape variety with an interpretation of great finesse. Terraquilia is a small reality located in the Modenese Apennines, and Romano Mattioli, its founder, decided to tell its story faithfully through his creations. 6 hectares of vineyards, in absolute respect of the territory and biodiversity, allowing mainly the local grapes to express themselves, such as Sangiovese, Malbo Gentile, Trebbiano, Grechetto, and Lambrusco Grasparossa, alongside a few rows of Traminer Aromatico. Great expressiveness and stylistic cleanliness characterize the liquids of the winery, which splendidly support the everyday table, accompanying it with great personality and at more than human prices.
The “Falconero Zero” is produced from Lambrusco Grasparossa grapes with a small addition of Malbo Gentile. From the vineyard to the winery, the intent is to let the grape and territory speak without filters and mediations, therefore a careful and respectful agronomic approach corresponds to the same attention in the winery, where the first alcoholic fermentation occurs spontaneously and the liquid macerates for 6-7 days on the skins. The second fermentation occurs in the bottle according to the ancestral method and with sboccatura à la volée, preceded by a tiny addition of sulfur dioxide.
The wine “Falconero Zero” delights from the visual aspect, where it proudly shows itself in its purplish dress edged with violet foam. A winey and impactful nose, equivalent to smelling a basket of fresh fruit or a bouquet of dark flowers, along with a refreshing balsamic note reminiscent of peppermint. On the palate, the liquid is dry and has great drinkability, and its delicate tannic friction continuously propels it, calling out loudly for food, even better if local. Leader.
