The Lambrusco Grasparossa di Castelvetro Secco by Manicardi comes from Lambrusco Grasparossa vines that are cultivated on the hills of Castelvetro, in the surroundings of Modena. The vineyards are located about 200 meters above sea level, and the training method is that of the spurred cordon. The winemaking is the traditional red one, and the must obtained from the pressing of the grapes ferments at controlled temperature in steel, macerating on the skins. The refermentation then takes place in autoclave, following the principles productive of the Martinotti Method or Charmat, where the wine remains until the bottling operations begin.
