It expresses a lively, smooth, and playful personality, rich in aromatic hints of small fruits and vegetal notes, enriched by sensations of fresh yeast.
The Lambrusco "La Rondinina" grows among the 10 hectares of Podere Cervarola, located among the gentle Modenese hills of the village of Villabianca, in the heart of the homeland of Lambrusco. Hidden among the heights, Andrea Della Casa tries to bring to light the ancient traditions of a wonderful territory for its history, recovering the past viticultural memories and planting exclusively indigenous grape varieties. Following the philosophy of the Podere, it is the synergy between natural forces and human labor that drives the vine to express itself in the language of its terroir of origin, and it is in respect of this belief that all interventions within the vineyard are carried out.
Podere Cervarola brings to life the Lambrusco "La Rondinina" from Lambrusco Grasparossa di Castelvetro grapes, absolutely linked to its lands since the times of Pliny and Cato. The sinuous hills host the vines that are worked exclusively by hand and with methods that are totally respectful not only of the environment as such, but with an eye to the future fertility of the soil, which more than anything else must be preserved. The vinification is natural, without temperature control, nor clarification, nor filtration. The characteristic fizziness is obtained with ancestral method, which involves stopping the fermentation to leave the necessary residual sugars for refermentation in the bottle without external addition. It is bottled in spring with a waning moon.
"La Rondinina" is a gift from Podere Cervarola that expresses all the strength of rosé Lambrusco, but it does not only speak a poetic language; it is, rather, a memory of Emilia that remains almost solely in the wise and romantic farmers of Bertolucci's films. A profane hero, but one that you inevitably fall in love with, with its brilliant pink cloak and its intense aromas of strawberry and hibiscus, with a tantalizing fizziness that incites a bite of a slice of bread with salami. It is almost a tear that falls at the thought of the calloused hands of a grandfather who caresses us in a tender memory; it is the memory of his glass filled with friends.
