The “Marchese Manodori” by Venturini Baldini is Emilia “all about Lambrusco”. Complexity and effervescence coexist in this red sparkling wine made of fruit and spices, tannin and bubbles. Elegance and liveliness define the character of the “Marchese Manodori”, a prestigious label signed by the Venturini Baldini winery. Respect and enhancement of the territory in its natural characteristics is the cornerstone of the activity in the field and in the cellar. This strong belief has led to the adoption of a biological cultivation method. The results of this way of working can be seen every day by admiring the animals that live naturally in the wild near the estate, animating the surrounding woods and meadows.
The “Marchese Manodori” is a Lambrusco originating from a blend of different clones: Lambrusco Marani, Maestri, Salamino, and finally Grasparossa. The vineyards are located at an altitude of 240 meters above sea level, grafted onto a clayey and sandy soil. During the firstdecade of September, the grapes are harvested by hand and, with the help of small crates, are transported to the winery. Here they are pressed and the obtained must is sent for a winemaking process that involves slow refermentation in autoclave with subsequent aging on the lees, known as Metodo Charmat lungo.
Venturini Baldini Lambrusco “Marchese Manodori” presents a deep ruby red color. The olfactory profile is characterized by a beautiful complexity of cherry, red flowers, grape juice, cloves, and pepper. Equipped with a decent structure, it also presents a well-perceptible tannin perfectly integrated with the lively fresh vein. Inseparable from a cotechino, prepared as required by true Emilian tradition.
