The history of Chiarli dates back to 1860, when Cleto, the founder of the family fortunes, decided to cease the activity of his tavern to dedicate himself exclusively to the production of Lambrusco. The “Premium” is a Lambrusco di Sorbara whose grapes, after harvesting, undergo a light maceration, and then ferment and undergo the sparkling process in autoclave, according to the principles of the Martinotti Method or Charmat, introduced for the first time by the Chiarli winery in Emilia-Romagna in 1959. The wine then, before being bottled, remains in aging on its own yeasts for three months.
