The agronomic management follows the principles of organic farming, with the utmost respect for the nature and environmental biodiversity. The vineyards of Malvasia, Spergola, and Moscato Bianco are cultivated at an altitude of about 150 meters above sea level, on soils characterized by clay matrix, with the presence of sand and gravel. At the end of the harvest, the grapes are softly pressed and the must is fermented in steel using only indigenous yeasts. The sparkling and refermentation occur in the bottle, and the wine is marketed sur lie, without clarification, filtration, and without disgorgement.
