Organic and biodynamicThe Maturano del Frusinate "Arcaro" from the DS Bio winery is a fresh and savory white wine perfect for pairing with fish dishes offering excellent quality-price ratio. It is made with the same-name grapes in purity vinified with only indigenous yeasts, the aging proceeds for a few months in cement tanks. The straw yellow color introduces citrus and mineral sensations both on the palate and nose, concluding with excellent taste persistence.
“Arcaro” from the winery DS Bio is the most vibrant and immediate expression of the local indigenous variety Maturano, a white berry that grows in an unspoiled territory, on the Lazio slopes of the mountain leading to the Abruzzo National Park. The vines are surrounded by a varied environment, composed of typical tree crops like olive trees and the grazing of the Esperia ponies, an endangered breed kept alive by the passion of winemaker Danilo Scenna, founder of the estate.
DS Bio produces its “Arcaro” from the white berries of Maturano that bear fruit on the young plants of the estate, planted between 2013 and 2014 and cultivated under biodynamic practices with the classic trellis system: a nice comparison with the other white label, made from the century-old vines of the same variety, trained as alberata, which give life to the Matre. The soil is characterized by a strong presence of skeleton, which performs an excellent draining action, and by important limestone sediments, typical contributors of minerality. At an altitude of about 630 meters above sea level, the excellent exposure allows for the necessary sunlight to ensure perfect ripening of the grapes, which are hand-harvested. The fermentation is spontaneous, initiated and conducted by indigenous yeasts, and takes place in concrete tanks, without skin maceration. The transfer by gravity into new concrete tanks allows the wine to age for a few months on the fine lees. No filtration or clarification operations are planned before bottling.
The color of the Maturano del Frusinate “Arcaro” produced by DS Bio is a bright straw yellow. The impact on the nose is immediately characterized by a very clear minerality, accompanied by elegant and varied spicy notes, with a dynamic recall to citrus sensations. Equally savory, the first taste reveals a tense sip and ready drinkability marked by a lively freshness, with delicate hints of softness and a rather persistent finish. A territorial and surprising, with great balance and tasting pleasure: to be well paired with a spicy cuisine, perhaps with an Eastern flair, or with fresh or lightly aged goat cheeses.
