Derrumbes' Mezcal 'Durango' is produced with the rare Durangensis agave, a variety indigenous to the area, in the remote village of Nombre de Dios. It's a spirit that tells the story of northern Mexico, where it is typical to use mixed material pot stills, made with both wood and copper. To the nose intense hints of summer fruit, such as peach, and hints of dried fruit are evident, then the scene is dominated by mineral scents. Mezcal 'Durango' from the Mexican company Derrumbes is an artisanal mezcal rich in herbaceous and mineral hints, produced in the state of Durango from only the Durangensis agave variety, which is native to Durango. In this state, the Durangensis agave is also known by the name 'Cenizo', meaning 'ash', a reference to the greyish appearance of the plant. This variety of agave, which has strongly contributed to the recent success of Durango's mezcals, prefers to grow among pine or oak trees or in the desert, reaching up to 4.5 metres in height when mature.
Derrumbes Mezcal 'Durango' originates from only the Durangensis variety of agave from the state of Durango, specifically from the remote village of Nombre de Dios. After harvesting, the agave is cleaned to extract the sugar-rich heart, which is then cooked in traditional underground stone ovens. The subsequent pressing is done by hand using an axe and mallet, with the resulting sugary juice then fermented in buried wooden and clay vats. The distillation process takes place in special wooden and copper stills and after 60 days in the bottle, the mezcal is finally ready to be released onto the market. The entire production process takes place under the expert supervision of Maestro Mezcaleros Uriel Simental.
On visual inspection, Mezcal Derrumbes 'Durango' has a transparent and crystalline appearance. The nose perceives pleasant hints of summer fruits and nuts, aromas that encounter herbaceous nuances and delicate smoky memories. We find these sensations on the palate, where the alcohol content is in excellent balance with the freshness and mineral aftertaste that characterises mezcal.
