The “Cuvée dell’Abate” by Zaccagnini is a Montepulciano d’Abruzzo that arises from a particular approach in the vineyard. Among the rows of Montepulciano, integrated pest management is practiced alongside classic conventional agriculture. The grapes obtained from the thinning of the bunches are gently pressed, and the must obtained from this operation macerates using the submerged cap technique, fermenting in stainless steel containers. The final aging phase first involves a stabilization period in steel, for a total of 4 months, and then a passage in large barrels for a total duration of 6 months.
