The “Numen” by Paolo Leo is a broad and complex wine, dedicated to those who love whites aged in barrique. It is a Chardonnay from Salento with a sunny and Mediterranean character, which perfectly expresses the territorial character of this versatile and flexible French grape variety, demonstrating its ability to adapt to very different terroirs, bringing out its best characteristics. Ripe and rich, it recalls aromas of yellow fruit, tropical fruit, and vanilla, offering a long and persistent sip. It is a Chardonnay suitable for pairing with elaborate and flavorful fish dishes, delicate white meats, or medium-aged cheeses.

The Chardonnay “Numen” by Paolo Leo is born in the splendid lands of Salento. The estate is located in San Donaci, about halfway between Brindisi and Lecce. It is a family-run estate of about 24 hectares, characterized by a typically Mediterranean climate, warm and breezy, mitigated by sea breezes. The soils are predominantly tuffaceous and calcareous, very suitable for quality viticulture based on low yields. The most cultivated grapes are: Primitivo, Negroamaro, Malvasia Bianca, Malvasia Nera di Lecce, and Chardonnay, in full respect of the local customs.are: Primitivo, Negroamaro, Malvasia Bianca, Malvasia Nera di Lecce, and Chardonnay, in full respect of the local customs. Many parcels are over 40 years old and are cultivated using the alberello method, according to the oldest practices of our south. The philosophy of the winery is oriented towards producing wines that can well represent the characteristics of Salento, its climate, and its traditions.

The wine “Numen” by Paolo Leo is a pure Chardonnay aged in barrique, which combines the desire to produce a great Apulian wine while following the most classic international models. The grapes are harvested slightly late and subjected to soft pressing. The must ferments in French and American oak barriques and always matures in barrique for a few months. It presents a rather intense yellow color with golden reflections. The bouquet recalls ripe yellow-fleshed fruit, candied citrus peel, tropical fruit, pastry sensations, vanilla, and soft spices. On the palate, it has a good structure, it is broad, dense, and complex, with a satisfying fruit and a long and harmonious finish. It is a label that skillfully combines the character of Salento with the style of French tradition.
