Organic and biodynamicThe Extra Virgin Olive Oil "Orgilla" is a biological oil from Marche produced by Agricola Fiorano from a mix of local cultivars, including Leccino and Frantoio. With a shiny greenish color and golden reflections, it has aromas of vegetal notes of celery, chicory, and tomato leaf, hints of green apple, aromatic herbs, and slight spicy trails of chili. On the palate, it is structured, fragrant, and pleasantly bitter, with light spicy notes. Perfect for enhancing and valuing baked fish dishes or cold salads.
The EVO Oil "Orgilla", produced by Fiorano, is a Certified Organic Extra Virgin Olive Oil that originates in the heart of the Marche. The Fiorano Agricultural Company was established in 1997 in the Fiorano district of Cossignano, in the province of Ascoli Piceno, and cultivates olive groves, vineyards, almond orchards, and arable land in full respect of nature, under certified organic farming practices and with minimal environmental impact. Thanks to a photovoltaic system, since 2010 the company has been almost energy self-sufficient. The oil is the result of the desire to give voice to the ancient vocation of the territory, enhancing the native cultivars. It comes from a blend of Leccino, Frantoio, Pendolino, Sargano, and Oliva Tenera Ascolana, the latter two being true rarities, historically present only in the Piceno area.
"Orgilla" is an EVO Oil produced in a beautiful hilly area, located between the Adriatic Sea coastline and the first foothills of the Sibillini Mountains National Park. The climate is particularly suitable for olive cultivation,of the olive tree. It is mild and temperate, with good temperature variations, due to the cool air currents descending from the peaks of the Apennines, which are opposed by the gentle sea breezes. The olive grove covers 5 hectares, with a south-west exposure and a planting density of 250 plants/ha. The olive trees have an average age of 30 years and yield about 30 kilograms per plant. The harvest takes place during the month of October, at the beginning of the color change of the fruit, transitioning from green to brown. The milling takes place within 12 hours of harvesting, in order to preserve the fragrance of the aromas and keep the acidity and peroxide levels low. The extraction is done by cold pressing, with a controlled temperature below 27 °C, in a two-phase continuous cycle mill. Before bottling, the oil is stored in stainless steel tanks in the absence of oxygen.
The EVO Oil "Orgilla" from Fiorano is bright green in color with luminous golden reflections. On the nose, it releases a bouquet delicate, characterized by vegetal aromas of tomato leaf, artichoke, freshly cut grass, fresh almond, chicory, celery, green apple aromas, and hints of aromatic herbs. On the palate, it is fragrant, harmonious, and fruity, with a delicate structure, a perfect taste-olfactory correspondence, and pleasant almond notes. The oil is bottled after static decantation and without filtration, so it may present slight cloudiness at the bottom due to the presence of micro particles of olive pulp. Its delicate taste makes it particularly suitable for accompanying fresh salads, cooked vegetables, or fish dishes.
