Exclusive wineryThe Parrona Bianco 'Piu' Anfora Tierra Savia is a fragrant and complex white wine, produced from Parrona, an indigenous grape variety from vines over 100 years old. Fermentation occurs in contact with the skins in amphora, where the wine continues to mature for 12 months: the skin maceration gives it beautiful amber reflections, on the palate it is rich and enveloping, on the nose it expresses notes of tropical fruit, citrus hints, and toasted hazelnut. Perfect to try with flavorful vegetarian first courses or fish second courses!
The Parrona Bianco ‘Piu’ Anfora from Tierra Savia is configured as a dynamic and enveloping orange wine, with great character, made exclusively from the rare white grape variety Parrona. Through the ‘Piu’ project, José Antonio Acosta and Pedro Cano from the Tierra Savia winery aim to recover ancient local grape varieties and ancestral winemaking methods in terracotta amphorae over 100 years old. In this sense, the ‘Piu’ Anfora Parrona Bianco is crafted through prolonged skin maceration, a technique that is part of the winemaking tradition of Sierra Morena. Indeed, local old producers assert that in the area white wines were habitually vinified like reds.
‘Piu’ Tierra Savia Parrona Bianco Anfora is made with only Parrona grapes from century-old vines, cultivated following the principles of certified organic farming on soils rich in red slate. The bunches, entirely hand-picked, are fermented in 200-year-old terracotta amphorae accompanied by 10 days of skin maceration, during which daily manual punch-downs are performed. Still in amphora, the liquid matures for 12 months on the fine lees before the final bottling.
To the eye, the Parrona Bianco Anfora ‘Piu’ from the Tierra Savia winery shows an intense amber-yellow color. The olfactory panorama offers hints of tropical fruit that meet citrus, floral, and toasted dried fruit notes. The sip is enveloping and intense, tasty and vibrant, with a savory, aromatic, and slightly astringent finish. A Spanish orange wine that pairs splendidly with flavorful foods such as aged cheeses or seafood or land risottos.
