The Passerina from Lazio “Costafredda” by Carlo Noro is an intense white, produced with pure Passerina, typical of the Frosinone area. A quick maceration on the skins gives great body to this aromatic white, with hints of dried fruit: apricots, oranges, grapefruit introduce a finish rich in notes of Mediterranean scrub. On the palate, it has a great body, slight astringency, and moderate freshness, to be paired with white meat dishes like Roman-style chicken
