The producer, Salvatore Ferrandes, a farmer and producer of capers, raisins, and oil, learned to make wine as a self-taught individual receiving great recognition: his passito has been defined as one of the best sweet wines of the Mediterranean.
The Passito di Pantelleria by Salvatore Ferrandes comes from old bush vines dating back to 1965. The bushes are sheltered by anti-wind hollows carved into a volcanic soil rich in minerals at an altitude of about 350 meters. We are in the district of Mueggen, in the interior of Pantelleria, in a terroir rich in tradition, where Arab culture has left a deep mark on vine cultivation and the landscape. The Zibibbo grapes are hand-harvested in small boxes and then left to dry in the sun for 8-15 days on trellises resting on lava stone walls. The dried grapes are then fermented and the must placed to ferment with indigenous yeasts in steel, where it rests for at least 6 months.
The Passito di Ferrandes is produced in very limited quantities, less than 4,000 bottles, and only in years deemed exceptional. It is a vintage passito wine that can evolve in the bottle for many years, further enriching itself with complexity and richness: hints of raisins, candied citrus, dehydrated fruit combine with marine nuances and particular notes of capers, salt, and aromatic herbs in an unforgettable profile of immense charm.
