Organic and biodynamic"Pepato" is an intense, mineral and spicy red wine from Marche, born form Vernaccia Nera grapes, aged for 12 months in barriques and for other 12 in bottle. It spings out spicy and mineral perfumes of black pepper, sweet spices and black cherries and it has a fresh, energic and well-balanced flavour, with very fine tannins.
The Marche red wine "Pepato" is a wine with which the Fontezoppa winery honors a regional indigenous grape variety, the Vernaccia Nera. A grape rich in nuances on the nose, as one notices from the very first moments when the wine glides into the glass. Spices, mineral sensations, fruit, and flowers alternate indeed minute by minute, giving life to a complex bouquet, composed of a high quantity of aromas. A label that deserves a tasting from all enthusiasts, as also testified by the interesting scores awarded by the main Italian industry guides.
The "Pepato" made by the Fontezoppa winery is born from the pure grapes of a variety that, in the Marche terroir, finds a cradle that allows it to express itself at excellent levels, the Vernaccia Nera. The vines of this variety are cultivated using the guyot system within vineyards exposed to the south, at an altitude of about 450 meters above sea level. The terroir is characterized by sandstones and medium-textured limestones. The grapes, once harvested, ferment alcoholically in steel, where they also undergo malolactic fermentation. The aging takes place for 4 months on the lees in steel, then continues for 12 months in barrique and ends in glass, where, after bottling, the wine rests for at least another year.
The red wine "Pepato" signed by Fontezoppa reveals itself to the eye with a hue that recalls ruby. The range of aromas that envelops the nose tells of complex sensations, where mineral and spicy notes resonate, enriched by light floral and fruity nuances. On the palate, it is full-bodied, round, with a drinking experience in perfect taste-olfactory balance, where the sip is characterized by a fresh and smooth vein. A bottle that we could define as "concentrated", which lends itself well to accompany platters of aged cheeses as well as second courses based on red meat, preferably grilled.
