The Petit Chablis ‘Hauterivien’ from Domaine Isabelle et Denis Pommier represents a fresh and accessible interpretation of one of the most suitable wine-growing areas for the production of white wines, such as Chablis. In particular, the AOC Petit Chablis was established in 1944 and includes a production area formed by the upper hillside slopes and the plateaus of the peripheral area of Chablis, on both sides of the Serein river. Generally, these are Chardonnays characterized by greater immediacy and ease of reading compared to the rest of the wines produced in the area, making them ideal for consumption when young.

Domaine Isabelle et Denis Pommier Petit Chablis ‘Hauterivien’ is made exclusively from Chardonnay grapes grown under certified organic farming on soils mainly composed of clay and limestone. The vines are on average 25 years old and are located in the Hautérivien plot, within the municipality of Villy, north of the village of Chablis. Following the harvest, the grapes are vinified whole through soft direct pressing and spontaneous alcoholic fermentation of the must in temperature-controlled stainless steel tanks, the same winemaking containers where malolactic fermentation takes place and aging for 6 months on the fine lees that precedes the final bottling.

The Petit Chablis ‘Hauterivien’ from Domaine Isabelle et Denis Pommier has a straw yellow color with brilliant golden reflections. Fine and articulated is the olfactory mosaic, described by aromas of white-fleshed fruit and citrus that blend with sweet hints of white flowers. A subtle mineral vein completes the olfactory context. On the palate, it is fresh and savory, full and balanced, with a persistent mineral and citrus finish.
