The Pinot Noir “Aide Memoire” by Tony Bornard is a peculiar red, not a classic Pinot. The volcanic Tony succeeded his father Philippe at the helm of the winery and produces artisanal wines in his estate that overlooks the village of Pupillin, a pearl of the Jura. On the nose it is fruity and earthy, with notes of cherries and pleasant hints of champignons, a 'funky' profile that pairs well with the underbrush notes that linger long. On the palate it is truly peculiar: savory, with earthy and mineral hints, it has an intriguing touch reminiscent of umami. Special with mushroom or game dishes
