Organic and biodynamicThe Poulsard “Poolsard” by Oenosapiens is, as the name suggests, a ‘pool wine’, fresh and easy to drink, perfect to chill and enjoy during hot days, perhaps between dives! The three friends Filippo, Federico, and Giacomo experiment with many less common varieties: this time the choice has fallen on Poulsard, a typical red from Jura. On the nose, typical aromas of cherry and pleasant earthy hints are perceived, adding complexity. The sip is light and pleasant, fragrant and distinctly fresh. Once opened, it will be hard to do without it!
The Poulsard "Poolsard" by Oenosapiens is a fresh, drinkable, and energetic wine made from a typical Jura grape, the Poulsard. Oenosapiens is the modern and dynamic project of three Italian friends, true vineyard experimenters, who decided to bet on lesser-known French grape varieties to create something original and immediate, in line with an artisanal philosophy. Oenosapiens works with local wineries to produce its wines, sourced from different parts of France, to limit energy waste and promote a modern and sustainable product.
The Poulsard "Poolsard" is produced with red grapes that grow on Jurassic formation soils, which were once covered by water. The grapes used for the 'Poolsard' are cultivated on limestone soils enriched with different types of marls. The grapes undergo a cold pre-fermentation maceration lasting three days, which allows for the gentle extraction of tannins and aromas. Subsequently, the must is pressed and transferred to steel tanks, where fermentation takes place.spontaneously. After completing both alcoholic and malolactic fermentation, the wine is racked without the addition of sulfites and bottled immediately.
The Oenosapiens "Poolsard" Poulsard, as playfully suggested by the name, is a 'pool wine', perfect to drink to refresh oneself, perhaps in front of a pool or at the sea. The wine is light and fresh, with characteristic vegetal and earthy notes typical of the variety. On the nose, there are also aromas of red fruit, particularly cherry, which manifest in different shades, from freshly picked cherry to candied cherry. A slight tannicity supports the sip, fresh, savory, and juicy. A bit like cherries, one sip leads to another.
