The Prosecco Frizzante “Sui Lieviti” by Gregoletto is the oldest version of the sparkling wine from the Marca Trevigiana, which the winery has always produced in memory of the past and the centuries-old history that binds it to this land. Before the advent of modern technologies and the use of the autoclave, the sparkling wines from the Valdobbiadene and Conegliano area were produced with refermentation in the bottle on the lees. Today it is a type that has come back into fashion among enthusiasts who are more attentive to traditions, precisely to recover a more authentic relationship with the wines of this area. It is a dry sparkling wine, with an essential sip, with no concessions to the sweetness that usually accompanies modern Prosecco. A wine to rediscover.
“Sui Lieviti” Prosecco Frizzante is the result of one of the historic wineries of the Treviso lands. The Gregoletto family has been present for centuries in the Valdobbiadene area and produces a range of wines faithful to the oldest customs, without yielding to the recent trend of Prosecco that has overwhelmed the territory. The grapes are hand-harvested and quickly transferred to the winery, where soft pressing takes place. After static decantation, the free-run must is sent for fermentation in stainless steel tanks at a controlled temperature of 18-20 °C. The base wines mature for about three months in steel tanks on the fine lees. The second fermentation occurs in the bottle sur lie, following the oldest ancestral method sparkling tradition, without final disgorgement.
The Prosecco Frizzante "Sui Lieviti" from the Gregoletto winery is a splendid interpretation of the most famous wine of the territory, created in the spirit of natural expressive purity. Dry and taut, it is ideal for those who appreciate the excellent quality of the grapes, enriched by the more complex notes derived from contact with the yeasts. In the glass, it presents a light straw yellow color with a slight perlage. The bouquet offers aromas of white flowers, green apple, pear, hints of herbal notes, and the classic note of bread crust. The sip is clear and vertical, with fragrant fruit and a fresh, savory finish. Depending on personal taste, it can be enjoyed by leaving the yeasts at the bottom of the bottle or by shaking it before uncorking to suspend them.
