From our sommeliers
The Sparkling Prosecco 'Phója' by Massimo Coletti is born in the heart of the province of Treviso, from twenty-year-old vines cultivated with the ancient Bellussera system, a high system created to combat downy mildew. The wine rests for six months on its own lees with regular batonnage. On the nose, it is delicate and clear, with white flowers, green apple, and a citrus hint reminiscent of cedar, with wild herbs on the finish. On the palate, it is lively, fresh, and with non-trivial effervescence. The sip has an almost marine sapidity. To be paired with light fried dishes from the Venetian tradition, such as sardines in saor
