Bival's ‘Pio 43’ is a fresh, inviting and complex Prosecco Valdobbiadene Brut. After ageing for at least 4 months on fine lees, it undergoes a second fermentation on the lees in steel tanks according to the Martinotti-Charmat method, resulting in a fruity and floral sparkling wine: hints of green apple, white peach, acacia and elderflower can be perceived from the very first sip. Perfect to enjoy with fish starters and light pasta dishes 

The Valdobbiadene Prosecco Brut ‘Pio 43’ is a sparkling wine made using the Martinotti Method with a slender and refreshing taste, produced by the Bival winery on the steep hills of the Guia di Valdobbiadene area. This bottle is a tribute to Pio Biasiotto, son of the founder Costantino Biasiotto, who created the Bival estate in the early 1950s with the purchase of the first vineyards. Pio, a historical memory of the winery, today leads the family business along with his younger brothers Ettore and Aldo and his nephew Paolo, son of Ettore. Within the production chain, he oversees every phase, from vine pruning to winemaking, with the experience of someone who has always been in the wine world.

The ‘Pio 43’ Bival Valdobbiadene Prosecco Brut is a pure Glera from vines grown on the vocated hills of the Valdobbiadene area. Following the manual harvest, carried out between the second and third decade of September, the grapes are softly pressed whole, with the must obtained being conveyed into stainless steel tanksfor alcoholic fermentation at controlled temperature. Still in steel, the wine remains to mature on the fine lees for 4-5 months and after a light filtration, it is then placed in an autoclave for the sparkling process according to the Martinotti Method, lasting a total of 60 days. The process ends with a brief cold maturation on the yeasts at a temperature between 0 and 3 °C, a step that gives greater complexity and fragrance to the sparkling wine.

The Valdobbiadene Brut Bival ‘Pio 43’ Prosecco is pale straw yellow with greenish reflections and a creamy, persistent foam. The nose is defined by fragrant fruity and floral notes of green apple, white peach, acacia flowers, and elderflower, sensations that are found on the palate along with a fresh and dangerously inviting sip, not lacking a certain complexity.
