The Prosecco Superiore di Valdobbiadene Brut from the Elém Special Edition winery is made from pure Glera grapes, grown on the beautiful Venetian hills of Valdobbiadene. After harvesting and careful selection, soft pressing occurs followed by the alcoholic fermentation of the must in stainless steel tanks. The secondary fermentation takes place in autoclave according to the Martinotti Method, with the addition of sugars and yeasts for the sparkling process. Finally, the mass rests for a few months in steel before bottling.
