Prosecco di Valdobbiadene Superiore Brut from the winery Terre di San Venanzio Fortunato is made from pure Glera grapes, grown on the steep hills of the historical area of Valdobbiadene. The classic Prosecco area is the most suited to produce wines with an intense and rich aromatic profile. The vineyards are located at the foot of the Prealps, in a sunny area with a cool and always breezy climate. The soils, rich in minerals and of a calcareous-clay matrix, are ideal for vine cultivation. It is a land of heroic viticulture, with vineyards often cultivated on steep and rugged slopes, which require hardcommitment and many hours of manual labor, which is difficult to mechanize. After the harvest, the grapes are gently pressed and the free-run must is fermented in temperature-controlled stainless steel containers. The base wines are then placed in autoclaves for the sparkling process and refermentation according to the Martinotti Method.
