Torresano's Ancestral Rosé "Ta We No" is a rosé frizzante produced from a typical La Mancha grape variety. The grapes are harvested from old vines, bush-trained in the arid Spanish highlands. On the nose there are fragrant notes of red fruits, and Mediterranean scrub, which, combined with ancestral scents such as must and yeast, create a unique profile. In the mouth, it is fresh and slightly sparkling, with good flavor and a slight residual sugar, which makes the sip abboccato, pleasant and balanced. The Rosato Ancestrale ‘Ta We No’ from the Spanish bodega Torresano is a sparkling rosé wine that stands out for its engaging and tantalizing drinkability, an authentic expression of the type. It is refermented in the bottle according to the Ancestral Method, a technique that consists of bottling the must-wine when the alcoholic fermentation is not yet fully completed, so that the residual sugar from the must and the indigenous yeasts allow the development of carbon dioxide inside the bottle.

Torresano Rosato Ancestrale ‘Ta We No’ is made from only Tinta de Pampana Blanca grapes coming from a single plot with vines about 55 years old. The vines are trained in a bush style following regenerative viticulture practices, an agronomic vision that frames the vineyard as a complex ecosystem that must be returned what cultivation takes away. Following manual harvesting, the grapes are pressed directly using a traditional manual press, with the must thus obtained that goesto spontaneous alcoholic fermentation in stainless steel tanks thanks to only indigenous yeasts, without maceration. The sparkling process occurs in the bottle according to the Ancestral Method and the wine is finally marketed after a few months without undergoing any disgorgement.

The ‘Ta We No’ Rosato Ancestrale from Torresano has a light pink color with lively effervescence. On the nose, aromas of wild strawberry, raspberry, and rosemary alternate, combined with winey notes of must and hints of yeast. Clean and refreshing on the palate, savory and slightly sweet, with precious fruity returns that invite new sips. This is a sparkling rosé perfect to enjoy as a carefree aperitif in the company of friends and family.
