The "Rosso ... se" is a Rossese from Liguria with a rich and Mediterranean profile that ages in wood. The nose smells of small red fruit, licorice, dried flowers and a pleasant trail of Mediterranean scrub. The sip is authentic and intense, decidedly rich and soft, with a pleasant tannin and a clear savory freshness

Tenuta Selvadolce expresses with the Rossese “Rosso... se” the entire Mediterranean soul of the territory that surrounds it, in a favorable yet complex climate: the strong sunshine is tempered by sea breezes, but the fierce north wind often roars cold among the rows.

“Rosso... se” is produced by Tenuta Selvadolce through the pure vinification of Rossese grapes from the heights of Monte Caggio, in the area of the municipality of Perinaldo and within the historical denomination of Rossese di Dolceacqua. The remarkable altitude, reaching 600 meters above sea level, clearly indicates how rugged the location is, defined by significant slopes and dry stone walls necessary for cultivation. The agronomic management has followed the principles of biodynamics since the early 2000s, and the vines, the oldest dating back to 1940, are trained following the ancient bush system, with a planting density of up to 9,000 plants per hectare. Characteristic are the soils, composed of progressive layering of clays and sandstone rocks, which gave rise to the so-called flysch. The harvest can only take place manually, at the perfect ripeness of the fruits, with collection in small boxes and a yield of around 50 quintals per hectare. The alcoholic fermentation takes place in 25-hectoliter oak vats, using only indigenous yeasts, with skin maceration lasting about 3 weeks. The malolactic fermentation also occurs spontaneously, and the aging on fine lees takes place in used wooden barrels, continuing for 21 months. The Rosso is clarified through static decantation, without intervention with clarifications or filtrations, before bottling.
