The Rouge ‘Bacchus’ is a full and round interpretation crafted in the Vaucluse region by Domaine Houillon. In order to allow expressive freedom to the terroir of which they are part, the spouses Aurélien and Charlotte Houillon, owners of the Domaine, categorically exclude the addition of external inputs such as enzymes, oenological aids, and sulfites. Furthermore, the bottles from the winery are hand-labeled with paper made from the processing of the cuttings obtained from the pruning of the estate's vines, thus promoting environmental sustainability.
Domaine Houillon Rouge ‘Bacchus’ comes from a blend of Merlot (60%) and Syrah (40%), varieties cultivated according to the principles of organic and biodynamic agriculture on clayey, limestone, and slightly sandy soils. The harvest is done by hand and, after careful selection, the grapes are fermented in stainless steel tanks. Here, alcoholic fermentation occurs spontaneously thanks to the sole action of indigenous yeasts, accompanied by 10 weeks of skin maceration. In stainless steel, a maturation of a few months takes place before bottling, done without prior filtration or clarification and without any addition of sulfites.
The color of the ‘Bacchus’ Rouge from Domaine Houillon is a beautiful intense ruby red. From the glass emerge vivid fruity aromas of plum, cherry, and berries, combined with floral hints of rose and violet. A full and enveloping taste progression, characterized by fine and elegant tannins and a pleasant freshness on the finish that contributes to the overall balance. It is a red wine of remarkable versatility at the table, to be tried with roasted or grilled meats, flavorful first courses from the land, or aged cheeses.
