Mark Haisma, an Australian producer settled in Burgundy, presents the Saint-Romain Blanc ‘Le Jarron’, a label from the Côte d’Or with a refined and slightly exotic personality. The Appellation d’Origine Contrôlée of Saint-Romain takes its name from the homonymous municipality of the Côte de Beaune around which it develops. Unlike most of the AOCs in the area that are situated along the main slope of the Côte d’Or, the vineyards of Saint-Romain are located in a side valley that extends towards the plateau of the nearby Hautes Côtes de Beaune. As a testament to its remarkable winemaking vocation, this territory was among the first in the region where the Celts and Romans began to cultivate the vine.
‘Le Jarron’ Saint-Romain Blanc Mark Haisma is a 100% Chardonnay from vines grown on soils rich in limestone marls interspersed with layers of clay, at an altitude between 300 and 400 meters above sea level. The grapes are hand-harvested when they have reached the ideal balance between sugars and acids and are then vinified in white through soft pressing and traditional alcoholic fermentation. The subsequent aging period lasts several months and takes place in 500-liter French oak barrels, with a well-considered use of wood. This is followed by bottling and a further brief resting in glass before release.
The Saint-Romain Blanc ‘Le Jarron’ by Mark Haisma has a straw yellow color with golden reflections. The aromatic spectrum opens with perceptions of apricot, mango, and pineapple, combined with floral hints and irresistible sweet and creamy notes of almond and salted butter. The sip is fine and elegant, savory and enveloping, with refreshing citrus returns and a mineral finish that lingers long on the palate.
