The short maceration on the skins for 3 days gives it a good intensity and aromatic complexity, with scents of flowers and yellow fruit and a fresh, savory, and fruity taste.
The Saittole Bianco from Ribelà is a multifaceted and intoxicating white wine, a marvelous fusion of the innate aromaticity of Malvasia and the freshness of Trebbiano. One of the most interesting and dynamic realities in central Italy is that of the Ribelà team, who, along with a few other local producers, have decided to revitalize the Frascati area, endowed with immense yet unexpressed potential. Two hectares of vineyard dedicated solely to indigenous grape varieties and the careful supervision of Danilo Marcucci, one of the most skilled winemakers in the world of artisanal wine. A return to the land and tradition, therefore everything, from the vineyard to the cellar, happens in the most spontaneous and respectful way in accordance with natural balances. The results, in liquid form, speak and tell of a winery that every year churns out engaging and unique interpretations. Chapeau!
The Saittole wine is the result of a blend mainly composed of Malvasia di Candia and Puntinata, as well as Trebbiano. A traditional Frascati, therefore, made from multiple varieties, all united by the fact that all the vineyards grow without the help of chemical or synthetic substances. In the cellar, spontaneous fermentation continues in steel containers and maceration on the skins for 3 days, with aging taking place in the same containers. No clarification or filtration before bottling and the addition of sulfur in homeopathic doses.
The Saittole white captivates from its visual appearance, with its vibrant and rich yellow hue. It explodes as soon as it reaches the nose, in a joyful whirlwind of fruit and flowers of every color, from peach to citrus, from hawthorn to broom. And then the Mediterranean scrub, wild herbs, and toasted grain. A lively and shifting complexity that changes over time in the glass. On the palate, it reveals itself perfectly balanced between the richness of fruit brought by Malvasia and the sapidity of Trebbiano. Each bottle is a journey.
