The wine "Le Remparts de Bastor" signed by the winery Bastor - Lamontagne is born from the blend of Sèmillon, Sauvignon, and Muscadelle, varieties cultivated in the municipality of Preignac, one of the five villages that contribute to forming the denomination. We find ourselves in a terroir characterized by a siliceous-stony subsoil, benefiting from an ideal climate for the formation of that "noble rot" which, causing an increase in residual sugar in the grapes, is essential for the creation of Sauternes. The must ferments slowly in wood, for a total period of about 3-4 weeks. The final aging phase takes place in barrique and lasts between 13 and 18 months. Throughout the entire process, no clarification operations are carried out.
