The grapes necessary for its production are carefully selected and vinified using only indigenous yeasts, and the aging takes place in oak barrels for 8 months. The golden yellow color accompanies rich aromas of ripe summer fruit and floral notes. The palate enjoys a deep, soft, broad, and long sip.
The Sauvignon Blanc ‘Wild’ is a white wine capable of combining roundness and tension produced by the New Zealand winery Greywacke. It is the flagship Sauvignon Blanc of producer Kevin Judd, made in Marlborough, one of the regions where this international grape variety can express itself at its best. The term “wild” refers to the fact that this label has not been tamed as the entirety of the fermentation process is entrusted to the naturally occurring yeasts on the grapes and in the winery environment.
Greywacke ‘Wild’ Marlborough Sauvignon Blanc comes from the eponymous French-origin variety grown in the Southern Valleys area on soils of different nature, from alluvial ones rich in greywacke rock, from which the estate gets its name, to clay-loam soils. Once harvested, the bunches are directly pressed gently and the must obtained is first cooled and then placed in old French oak barrels. Here, the alcoholic fermentation takes place exclusively by the indigenous yeasts and the subsequent maturation phase of about 8 months on the fine lees. 2/3 of the wine also undergoes complete malolactic fermentation.
In the glass, the Marlborough ‘Wild’ Greywacke Sauvignon Blanc displays an intense straw yellow color with golden reflections. Aromatic profile full and articulated, defined by perceptions of summer fruit, candied citrus, and honey that blend with hints of brioche, herbs, and fresh flowers. Creamy, broad, and generous on the palate, where the enveloping softness is perfectly balanced by the energetic fresh-salty vein, in a long and flavorful finish. With excellent longevity, the Sauvignon Blanc ‘Wild’ can divinely accompany rich and structured seafood preparations, but also white meats or creamy and flavorful risottos.
