The Sauvignon by Dario Coos is a white wine with a very varietal profile, produced on the sandy marl at the edge of the Colli Orientali. The Sauvignon by Dario Coos is a white wine in which the aromatic elegance reaches an appreciable intensity and balance. The varietal, of international origin but which is so well suited to Friuli Venezia Giulia, is undoubtedly well presented, with typical aromas on the nose, while on the palate minerality and freshness outline the contours of a satisfying tasting perfect for accompanying the entire meal. Try it with a typical Friulian fish recipe, the brodetto alla gradese.
The Sauvignon Dario Coos comes from several vineyard parcels included within the DOC of the Colli Orientali del Friuli. The vineyards climb steep terraced slopes, characterized by the Friulian “ponca”, a mix of limestone and marls of Eocene origin. The grapes are harvested by hand and are pressed whole; the must thus obtained ferments in stainless steel tanks where the temperature is kept under control. The final aging phase consists of a passage in steel lasting between four and six months, at the end of which the Sauvignon is bottled to be then marketed.
The white Sauvignon signed by Dario Coos presents itself to the eye with a bright straw color, crossed by a range of colors that tend more towards greenish at the rim. The fruit, expressed with different shades, “blends” with typically varietal sensations, the boxwood leaf first, followed by hints of pepper, basil, and sage. On the palate, it has a light body, which colors the sip with dynamism and smoothness, while in the mouth expands a savory, clean, and crisp sip.
