The Sauvignon “The Wine Collection” by San Michele Appiano is a wine that encapsulates in itself the highest qualitative interpretation reserved by the winery for Sauvignon. We are faced with a bottle that inaugurates a project, the “The Wine Collection”, which aims to bring the excellence of different grape varieties into the bottle, all presented in purity. Here, Sauvignon expresses itself with a personality on the nose and in the mouth that is rarely encountered, played on a multifaceted bouquet and on a structured yet always elegant sip. If you are a Sauvignon enthusiast, then this is a bottle that will give you an experience that is at times moving. Chapeau!

“The Wine Collection” by San Michele Appiano is a Sauvignon that comes from vines aged between 25 and 35 years, cultivated on predominantly gravelly and calcareous soil located in the Appiano Monte area. A maceration of 3 days is carried out, followed by the soft pressing of the grapes. The must obtained ferments in stainless steel containers. The final aging involves three steps: 12 months in oak tonneau, 12 months in steel and finally, after bottling and before being put on the market, another 10 months spent maturing directly in glass.

The Sauvignon “The Wine Collection” San Michele Appiano presents itself to the eye with a decidedly straw-yellow color, crossed by slight reflections tending more towards greenish. Generous and concentrated on the nose, where layered notes alternate, from exotic fruit to aromatic herbs, from sweet spices to mineral and toasted undertones. On the palate it is fascinating, rich in structure but always soft and enveloping thanks to a juicy sip, where freshness and minerality trace an elegant tasting line. It closes with an excellent persistent finish, characterized by a slightly smoky aftertaste. The first label that signs the “The Wine Collection” line, wanted by the winery to seal very limited and sought-after productions.
