The Spumante Metodo Classico Brut ‘10’ Valdobbiadene Prosecco Superiore from the Veneto estate Valdo is a fine and balanced sparkling wine that combines the delicate aromaticity of the Glera grape with the deep character imparted by the Metodo Classico technique. The vast majority of Prosecco is made through refermentation in autoclave according to the Charmat or Martinotti Method, which yields fresh wines rich in primary aromas. However, Prosecco produced using the Metodo Classico, the same method used for Champagne, is highly sought after, consisting of a bottle refermentation followed by a more or less prolonged aging on the lees, resulting in wines of greater complexity and body.
The Valdobbiadene Superiore Valdo Brut Spumante Metodo Classico ‘10’ is a 100% Glera from vines located at an altitude of 250 meters above sea level. After harvesting, the grapes undergo a soft pressing, followed by alcoholic fermentation of the must at a controlled temperature of 15 °C. Following a short rest, the sparkling base is bottled and added with tirage syrup for the sparkling process according to the Metodo Classico, with aging on the lees in glass lasting for 10 months before disgorgement and the further resting that precedes the final marketing.
The ‘10’ Spumante Metodo Classico Brut Prosecco Superiore Valdobbiadene has a bright straw yellow hue with fine and persistent effervescence. The aromatic bouquet reveals scents of yellow-fleshed fruit and citrus, combined with enticing floral hints, with pleasant honeyed notes in the finish. Creamy, rich, and structured the tasting, well supported by the inviting freshness that anticipates the delicate aromatic returns typical of the grape variety.
