The "Oltrenero" is a Brut Rosé Sparkling Wine made from pure Pinot Nero grapes, a varietal that is the flagship of the entire production of the winery. After destemming the bunches, a cryomaceration lasting 6-8 hours is carried out, followed by a soft pressing of the whole grapes. A static decantation of 12 hours follows, after which the fermentation of the must begins, carried out in steel for 12 days. The second fermentation takes place, as per the rules for the production of Classic Method, in the bottle, where the Spumante then remains to refine on the yeasts for 36 months. Once maturation is complete, the winery continues the production process with the operations of disgorgement, dosage, and bottling.
The Spumante Brut Rosé "Oltrenero" presents itself to the visual examination with an intense salmon pink color, crossed by a line of fine bubbles, endowed with good persistence. The range of notes that develop on the nose presents a floral stamp, enriched by more fruity hints and olfactory memories that recall the yeasts of the aging process. On the palate, it is medium-bodied, with a soft and creamy foam that opens to a dry sip, dominated by a fruity and mineral taste; it ends with a finish of good persistence.
