The “Rosè de Noir” by Cleto Chiarli is a simple and smooth Spumante Brut, which expresses the best characteristics of Lambrusco Grasparossa. At the end of the harvest operations, the best bunches are pressed very gently, with a brief contact with the skins in the press. The must is then vinified in white with selected yeasts in stainless steel tanks. After a maturation period, the base wines are blended in steel tanks for the second fermentation and refermentation in autoclave. The color is delicate and lively pink, with a continuous perlage of good finesse. The bouquet offers fragrant aromas of wild strawberries, red currants, raspberries, and delicate nuances of violet, which anticipate a sip of rich and harmonious fruit. The finish is very fresh and pleasantly fruity. It is excellent to taste as an aperitif or to accompany seafood appetizers or a platter of tasty local cured meats.
