The Classic Method Dosage Zero "Il Mattaglio" is one of the most interesting labels produced outside the classic sparkling wine denominations. It is born in the hilly area near Bomporto di Modena, where Cantina della Volta is located. Made with a traditional cuvée of Chardonnay and Pinot Noir, it ages on the lees for 24 months. Refined and elegant, it impresses with the finesse of its aromas and for the salty and mineral freshness.
The Dosage Zero Sparkling Wine "Il Mattaglio" from Cantina della Volta comes from the great passion and expertise for the world of Champagne of Christian Bellei. His family has been involved in viticulture in the hilly area of Modena for four generations, which has proven particularly suited for the production of grapes for sparkling wine. Chardonnay and Pinot Noir are grown in a vineyard of about 9 hectares, which enjoys a splendid sunny exposure and a cool and ventilated climate, also thanks to the proximity of a centuries-old forest. The soils composed of limestone and clay have proven very suitable for the French grapes, which reach full ripening with great aromatic richness, always preserving an intact freshness. At the end of the manual harvest, the best bunches are pressed very gently. The free-run must ferments in temperature-controlled stainless steel tanks and the base wines remain in steel for a few months, before proceeding to the final blending. The second fermentation takes place in the bottle according to the Classic Method, with a minimum aging on the lees for 24 months.
The Dosage Zero "Il Mattaglio" is a surprising Classic Method that does not fear comparison with the most prestigious labels of Italian sparkling wine and confirms the vocation of many regions of the peninsula for the production of high-quality sparkling wines. In the glass, it presents itself with a pale and bright straw yellow color, crossed by a fine and continuous perlage. The aromas are characterized by delicately floral aromas, white-fleshed fruit, and hints of wild herbs. The sip is tense and energetic, dry and deep, with a finish on fresh and saline notes.
