Cantina della Volta
The originality and excellence of Cantina della Volta stem from the desire to produce high-quality wines from indigenous grapes, first and foremost Lambrusco, while utilizing the Metodo Classico, imported from France, or traditional bottle fermentation. The winery was founded in 2010 by Christian Bellei, a representative of the fourth generation of a family of passionate wine entrepreneurs from Bomporto di Modena. The name, besides recalling the toponymy of the place where it stands (on the Naviglio Modenese, in what historically was a hub for navigation, where boats performed a maneuver to change course), signifies this generational transition.
If the winemaking technique is the result of a wholly French passion for Champagne and the most refined processes, the grapes come from a 9-hectare vineyard planted on a sunny, clayey, and calcareous hilly terrain, exposed to the thermal excursion of an adjacent forest. The cultivation is conducted here with the utmost care and the harvest is strictly manual, to safeguard the integrity of the grapes. In a winery equipped with the most advanced technologies and cutting-edge systems, the winemaking process takes place, starting with the soft pressing performed by a Bucher Vaslin press. The subsequent procedures involve the use of temperature-controlled stainless steel tanks, systems for cooling the musts, a climate control system that allows fermentation, and a disgorging line.
