Marco Buvoli from the winery L’Opificio del Pinot Nero presents the Spumante Metodo Classico Extra Brut ‘Dodici’, a sparkling wine of extraordinary complexity and expressive depth crafted through an extensive aging on the lees in bottle for 12 years, hence the name. Marco is an artist of sparkling wine production who, with visceral passion, works with Pinot Nero in Gambugliano, in the Colli Vicentini, producing valuable Metodo Classico with a well-defined identity that ranks among the best expressions of artisanal bubbles throughout Italy.
The Spumante Metodo Classico ‘Dodici’ Extra Brut by Buvoli is a 100% Pinot Nero cultivated according to the principles of organic and biodynamic agriculture in the cool pre-Alpine climate of the Colli Vicentini, characterized by significant daily temperature fluctuations. It is an assemblage of different vintages with an addition of reserve wine from the Metodo Solera. In general, the grapes are hand-harvested, carefully selected, and then softly pressed, with the must thus obtained being placed in steel tanks for spontaneous alcoholic fermentation.of steel for spontaneous alcoholic fermentation. A part of the mass is then left to mature in wooden barrels according to the Solera Method. Once the blending of the different batches is completed, the cuvée is bottled for refermentation according to the Classic Method, with a remarkable 12 years of aging on the lees before disgorgement and Extra Brut dosage.
In the glass, the ‘Dodici’ Buvoli Extra Brut Classic Method Sparkling Wine presents itself with an intense golden yellow color and elegant effervescence. The aromas of baked apple, dried flowers, and butter are peculiar and articulated, meeting sensations of baking and notes of dried fruit such as almond and hazelnut. On the palate, it is very fresh and taut, with a finest bubble that accompanies the dry, savory finish with astonishing persistence.
