Buvoli's Spumante Metodo Classico Extra Brut "Super Sei" is a sparkling wine that ages for a long time, over six years, but with vibrant freshness. Buvoli is the 'Pinot Noir Factory', a Veneto winery that dedicates sweat and soul to this noble variety. The nose has aromas of white fruit and citrus, then jasmine flowers and the typical scents of pastry that make drinking this sparkling wine so enjoyable. The ‘Super Sei’ Spumante Metodo Classico Extra Brut is a bottle skilled in combining complexity and drinkability, made in Veneto by winemaker Marco Buvoli. The winery L’Opificio del Pinot Nero was born from Marco's desire to create an important and complex sparkling wine that follows in the wake of great Champagnes. In fact, the intuition came in the winter of 1997 while Marco was tasting an old Champagne Blanc de Noirs, which enchanted him so much that it led him to start this beautiful viticultural project based in the Colli Vicentini, founded on Pinot Nero.
L’Opificio del Pinot Nero by Marco Buvoli Spumante Metodo Classico Extra Brut ‘Super Sei’ is a pure Pinot Nero from vines cultivated according to the principles of organic and biodynamic agriculture. Once the grapes have reached the ideal ripeness, manual harvesting and careful selection are carried out, followed by gentle pressing. The alcoholic fermentation takes place in stainless steel tanks at controlled temperaturecontrolled thanks to the sole intervention of indigenous yeasts and, after a short maturation period, the cuvée is assembled with the addition of wines from previous vintages, partly aged in wood according to the Metodo Solera. The mass is then placed in the bottle for the sparkling process according to the Metodo Classico, with at least 72 months of aging on the lees. Finally, after the dégorgement, the wine is dosed Extra Brut.
Buvoli ‘Super Sei’ Spumante Metodo Classico Extra Brut has an intense straw yellow color with golden reflections and an elegant perlage. On the nose, one can perceive hints of ripe apple, citrus peel, and jasmine, enriched by notes of pastry and sweet spices. The sip surprises with vibrancy and tension, with a marked freshness supporting the excellent overall structure.
