The “KK” made by the Kante winery is a Metodo Classico characterized by the Dosaggio Zero, meaning no dosage liqueur is added during the final stages of production. It is a versatile sparkling wine that provides enjoyment both during aperitif and throughout the meal. The result is a highly original Spumante, where the terroir, with its intrinsic characteristics, is free to express itself at its fullest, offering a pleasantly fresh and mineral sip. The Spumante Metodo Classico Dosaggio Zero by Kante is made from a blend where Malvasia and Chardonnay contribute equally to create the blend from which the “KK” is born. The grapes come from vineyards that are about 15 years old, grown on red soil and limestone terrains, located about 250 meters above sea level. Once harvested, they are vinified in white, aging in barrique for 12 months. This is followed by the secondary fermentation in the bottle typical of Metodo Classico, in which the wine remains in contact with its own yeasts for at least 12 months. During the disgorgement operations, no dosage liqueur is added.
This Spumante Metodo Classico Dosaggio Zero “KK” branded Kante manifests in the glass with a color reminiscent of straw yellow, crossed by light greenish reflections; the perlage has a fine and persistent grain. The combination of aromas that envelop the nose tells of citrus and mineral notes, enriched by hints of yeast and bread crusts. On the palate, it is light-bodied, smooth, and slender, characterized by a savory and refreshing sip.
