“Terzavia” is the name of the new revelation from the De Bartoli winery: a Classic Method sparkling wine made from the typical Grillo grapes of Marsala, with an intense and full-bodied profile, capable of competing with the greatest and most prestigious Italian sparkling wines. It is an innovative and exciting wine that best combines the French tradition of bubbles with the expressive and sunny character of Sicily.
The Nature Sparkling Wine “Terzavia” by De Bartoli is made from Grillo grapes cultivated in the Contrada Samperi from vines nearly 30 years old rooted in flat, calcareous, and sandy soil. The harvest, strictly manual, begins on August 20 and involves a rigorous selection of the bunches. The bunches are cooled and subjected to soft pressing, followed by spontaneous decantation of the must. The first fermentation is triggered by only indigenous yeasts in steel tanks and, for 20% of the grapes, in French oak barrels of 225 and 500 liters. The tirage operations involve the addition of fresh must to dilute the alcohol and provide natural sugars, necessary for the secondbottle fermentation according to the Classic or Champenois Method. However, the wine ages for 12 months in steel, barriques, and French oak tonneaux. A refinement of at least 18 months on the lees in the bottle, before disgorgement, completes the production process and gives life to an intense and highly refined sparkling wine, intense and lively, characterized by aromas of ripe fruit, pleasantly saline, and with great persistence.
