ArtisanalCherubini's classic method sparkling wine "Exceptis" is a pure Pinot Noir, which releases slightly amber tones. A structured and decisive sip with intense mineral notes. The grapes are harvested by hand and subjected to a light crushing, the fermentation takes place with approximately 15% vin de reserve stored in barriques, without filtering. After maturing for 24 months, the wine is disgorged and topped up with the same wine.
The Cherubini Spumante Metodo Classico Blanc de Noirs ‘Exceptis’ is able to pamper the nose and palate with its evocative and seductive character. Although located just outside the borders of the Franciacorta area, the production of the Cherubini wine estate has little to envy from more renowned sparkling wines that can boast the DOCG. Behind it lies the love, expertise, and passion of Mattia Corbellini, a winemaker from Brescia who has set the goal of producing in total absence of filters and invasive manipulations.
The Spumante Metodo Classico Blanc de Noirs ‘Exceptis’ by Cherubini is made from only Pinot Nero grapes, grown among the Brescia hills on clayey soils characterized by an abundant presence of limestone rocks. The harvest is done by hand in crates, and the bunches are then directly pressed whole in a gentle manner, with the must thus obtained undergoing spontaneous alcoholic fermentation in cement tanks thanks to the intervention of the only yeasts present on the
grapes and in the cellar environment. Subsequently, the mass is added with 15% of reserve wine aged in barrique and then placed in the bottle for the second fermentation according to the Metodo Classico, with 24 months of aging on the lees. After manual disgorgement, the bottles are topped up with the same wine, thus without dosage, and during the entire processing, the liquid undergoes no clarification, stabilization, or filtration.The Blanc de Noirs ‘Exceptis’ Cherubini Spumante Metodo Classico is of an intense golden yellow color with amber reflections, with fine and lasting perlage. The nose opens up to hints of small red fruits and flowers, enriched by notes of bread crust and decisive mineral puffs. The taste stands out for its structure, strength, and intensity, yet not lacking a lively freshness that contributes to the dynamism of the sip.
