Cascina Chicco presents the Spumante Metodo Classico Rosé ‘Cuvée Zero’, an interpretation of the type with a fragrant and graceful aromatic profile. Cascina Chicco started producing sparkling wines back in 2001, establishing itself as one of the first wineries to produce a Metodo Classico sparkling wine from pure Nebbiolo grapes. In particular, the rosé winemaking aims to enhance the aromatic components of this noble grape, while also showcasing its great oenological versatility.

The Spumante Metodo Classico Rosé ‘Cuvée Zero’ by Cascina Chicco is produced from the grapes of a single black grape variety grown in clay-limestone soils. The bunches are harvested between mid and late August, in such a way as to work with grapes that have a high content of organic acids, a fundamental prerequisite for the production of fine sparkling wines. In the cellar, the bunches undergo a short cold skin maceration followed by a gentle pressing, with the must obtained that undergoes alcoholic fermentation in temperature-controlled stainless steel tanks. This is followed by the sparkling process in the bottle according to the Metodo Classico, with 30-36 months of aging on the lees before disgorgement and the subsequent topping up with the same wine, without any dosage.

The Metodo Classico ‘Cuvée Zero’ Spumante Rosé has a pale pink color with coppery reflections and a fine, lasting perlage. On the nose, there are hints of raspberry, pink grapefruit, rose petals, and aromatic herbs. The progression on the palate is creamy and dry, with pleasant freshness and sapidity, with a taut and elongated finish. This is a sparkling wine that pairs wonderfully with cured meats and seafood appetizers, whether hot or cold.
